Oolong teas are traditionally from Taiwan and from the same tea plant, Camellia Sinensis, but the way they are processed affects the taste making them so unique. The tea leaves are semi oxidised halting the process that makes the leaves turn fully brown. The leaves are then rolled and shaped before drying.
Oolongs can be re-infused a number of times, each time the taste changes. Keep the leaves to one side until your next put the kettle on!
