What's the difference between black and green tea?

Quick Answer

Both come from the same plant, the difference is oxidation. Black tea is fully oxidised, giving it a darker colour and bolder flavour. Green tea is barely oxidised at all, keeping it lighter and fresher-tasting.

A Little More

After picking, tea leaves naturally begin to oxidise (a process similar to a cut apple browning). Black tea is left to oxidise fully, developing deep, malty, robust flavours. Green tea is heated quickly after picking to stop oxidation almost entirely, preserving a lighter, grassier, more delicate character. Same plant, very different journeys.

Teaspoon Tip

If you enjoy strong flavours, you'll likely lean towards black tea; if you prefer something lighter and more delicate, green tea is worth exploring first.
