Boiling water suits black and herbal teas, but green and white teas prefer it a little cooler, around 80°C.

Delicate green and white teas can turn bitter and grassy if scalded with fully boiling water, since their leaves are more tender than black tea leaves. If you don't have a temperature-controlled kettle, simply boil the water and let it sit for a minute or two before pouring over green tea, that's usually enough to bring it down to the right range.
