In the 16th and 17th century, Old Brown Java was used as ballast in sailing boats travelling to Europe where the sea water gave the coffee a distinctive flavour. Nowadays its flavour comes from storing the coffee in open sheds so that they are exposed to the warm moist air during the rainy season. This aging process results in the raw coffee beans changing from green to light brown and the flavour strengthens while losing acidity.
